Easy Summer Snack for Teens: Vanilla Almond Creme Brulee Parfait

Hi mommas! Its officially summer and school is over!! My boys are at home and they are ready to eat me out of house and home! The boys are 13 and 10 and puberty appetites are in full swing. What happened to their school eating schedule? Why do kids instantly eat every hour on the hour when they’re at home? Can kids keep that same school schedule energy during the summer? Well,  I’ve noticed that my oldest is constantly hungry and wants to snack instead of eating real food. A few weeks ago I asked him why doesn’t he make a healthier snack and he replied, “mom I’m hungry now.” I instantly understood his struggle because we all have the same struggle; that is healthy food takes preparation and who wants to prepare a meal when there are ready made snacks like chips and rice crispy in the pantry.

After our conversation, I quickly went to Wegmans to pick up some fresh fruit and other healthier snacking options that didn’t involve tons of sugar. Clean eating, real food, and exercise are a MUST in our household. When my kids were infants and toddlers I was that crazy mom pureeing their food because God forbid my child eat Gerber (first time Mom craziness). Now that my kids are athletes I frequently speak about eating the right foods to fuel their bodies so they can perform. To my surprise my son ended up making what he calls a Vanilla Creme Brulee Parfait. I love his snack creation because it takes less than 5 minutes, doesn’t involve turning on a stove or the risk of burning down my house, doesn’t involve me cooking, and there’s very little sugar. This is the perfect snack for teens.
