A Healthy On-the-Go Snack - Frozen Yogurt Peanut Butter Blueberry Bites

Hi Curl Friends! To know me is to know I love healthy food and recipes. I’ve been eating clean my entire life. When I say eating clean, I mean whole foods, fruits, vegetables, and limited processed foods. When I had my kids I was the mom making my own baby food and feeding them only organic foods. Now don’t get me wrong, I do eat processed foods, candy, chips, ect, but my primary diet is whole foods. Now that I am 36 years old and my metabolism is slowing down A LOT (and I mean A LOT), I’m even more conscious of healthy food choices. We’ll get more into my specific diet later. Also, both of my sons are in puberty and are eating me out of house and home! So I’m always trying to create healthy, nutritious, and GOOD food for them. Here’s an easy healthy snack that both my kids and I loved.

Remember, one thing about my recipes is that you can have fun and make it your own. So don’t be afraid to switch an ingredient or add your!

Frozen Yogurt Peanut Butter Blueberry Bites

Servings: 2

INGREDIENTS

1 cup plain nonfat Greek Yogurt (you can also use vanilla Greek yogurt)

1 tspn honey

Peanut Butter or Almond Butter (at least 1 tbsp. per muffin)

Blueberries

Muffin pan

Muffin liners

DIRECTIONS

  1. In a bowl, add the Greek yogurt and honey and stir to combine.

  2. Line the pan with muffin liners and add mixture into 6 muffin tins (you can add as much or little as you want).

  3. For the peanut butter, scoop out as much or little as you want and microwave the peanut butter for 15 seconds. Spoon 1 tbsp. over each muffin (you can use as much or little are you like).

  4. Sprinkle blueberries over the yogurt cups.

  5. Freeze until solid, about 2 hours.

  6. Enjoy!

TIPS

  • These will not be completely frozen. We ate with a spoon.

  • You can add granola on top for some extra texture.

  • You can also drizzle honey and cinnamon on top.
